Being a mom of twin boys I am always challenged during meal times. If one decides he doesn't like what mommy made, the other one will follow suit. A perfectly thought out meal falls apart and so do I. Innovation is the key - I decided, so I started to experiment. Fusion recipes - mix Indian flavors with any and every cuisine. Here's my first successful recipe - and mind it, my definition of success is when they both say "yummy, mamma."
Penne Pasta in Tomato Spinach Sauce
Ingredients:
Pasta
Spinach
Tomato
Garlic
Ginger
Salt
Cumin Seeds
Black pepper powder
Coriander powder
Preparation
Boil Pasta - when done, strain and add butter. Keep aside.
Grind all the other ingredients to a sauce consistency.
In a pan, heat oil - add cumin seeds till they splutter and then add ingredients paste. Let this cook on medium heat for 10 minutes, then add the pasta. Cook for 5 minutes on slow.
Ready to serve! My kids loved it and i hope your kids will too. Though I have to admit this can get slightly spicy - so please add to taste.
Spinach in Hash Browns? Yes!
So, the Indian version of Hash Browns is called Aloo Tikki. And this was my recipe without spinach until I realized slipping in spinach went un-noticed and my kids LOVED it.
No Spinach Recipe
Ingredients:
Boiled Potatoes
Cooked White Rice (Leftovers) - optional
Soaked slice of bread (if you are not adding rice)
Cumin seeds
Salt to taste
Lime Juice
How To Make
Mix till everything blends well
Make meatball sized balls and flatten
Heat oil in pan for deep frying or in a non-stick pan for shallow frying
Fry till golden brown
Add Spinach version
Mix Chopped washed spincach plus all above ingredients and fry
You just made a gourmet meal for your little one. Serve Aloo Tikkis with plain white rice and cucumber. Yummmm! It's been so long since I heard the word "More, mamma" Yes it's music to ears, right mommies?!
